This is hands down the best carrot cake recipe I’ve ever made. It’s easy menu, made from scratch, wonderfully moist in the middle, has the creamiest cream cheese frosting, and is absolutely delicious!

2 chicken eggs

Canola oil, cup

Brown sugar, cup

1 teaspoon vanilla extract

1 cup whole wheat flour

1 teaspoon baking soda

0.5 teaspoon baking powder

Salt, teaspoon

1 teaspoon ground cinnamon

1 cup shredded carrots

cup coarsely chopped walnuts

Thick yogurt and grated carrots for topping

Mint leaves for garnish

Method carrot cake :

1. Preheat oven to 180 degrees Celsius, top and bottom heat. Set aside.

2. Mix whole wheat flour, baking soda, baking powder, salt and ground cinnamon together. Set aside.

3. Use a hand whisk to beat the eggs, canola oil, brown sugar and vanilla together until fluffy. Add the flour mixture from step 2 and mix well. Then add the grated carrots and walnuts and mix well again.

4. Pour into a 2-pound round mold lined with parchment paper.

5. Bake for 40-50 minutes or until cooked. Remove from oven and let cool slightly before removing from pan.

6. Cut into pieces as desired. Arrange on a plate. Decorate with yogurt, shredded carrots and mint leaves before serving.
